Yes of course,

In the ‘Modbus Data’ DB, I left all the parameters as shown in the screenshot except for ‘Remote Port’, which I had to set to 0 and leave 502 for the ‘Local Port’.

After that, as soon as my PLC went into RUN, the status code changed from 16#7002 to 16#7006. So everything was working as it should.

if I could little bit add something here. In case of Server, remote port must be set to 0 because it is expected to be dynamically set by Client HW OS. In your first set to 502 is simply impossible to have Client connection to your Server. On other side, no ETH connection is required (as you did in your HW cfg Networking), this is connection prepared via cfg of comm block (Server) and expected connection DB with all parameters so no cfg inside HW cfg Networks is required.
