Well, that's mildly annoying to not have known until now..

I'm a few thousand lines into my first 1500 STL project now. It would have been a great opportunity to switch to SCL.

I quite like STL, it's flexible and easily read in my opinion. SCL would be good to learn, just need an opportunity. 

Frustrating.

Do not worry about this if you do not need the  raw processing power.
The S7-1500 is a beast when comparing to the S7-300.
Chances are you will be okay.

I recommend you continue.. you will do your thought process more damage if you start thinking in another language. Set up some early tests to ease your mind that there will not be any speed bumps ahead to worry about.
