I want to do research on Braumat. But the documents I could find are very limited and not understandable. I wonder if you have an explanatory resource on creating a sample project?

For a good non-technical introduction to Braustar, have a look at this presentation from Automation.com describing the introduction of Braumat v8.0, in 2019.

At the bottom of that article there are links to Siemens Industry Mall describing present PCS 7 versions of the brewery-management software.
There are also a number of YouTube videos discussing different Braumat packages and operations with Braumat  and this web training should give you basics on implementing a Braumat control system.
