Could you please advise if i can build a dataset with different values and then load it to the symbolic IO? Is there any other object which could fulfill the role of the dropdown box than symbolic IO field?

you can also use the listbox dynamically and fill it with script. but you canot create entries, you would have set the number of entries in engineering. but you can set the texts by Javascript in Runtime

unfortunately there is not a control like the basic combobox control from WinCC V7/8 or Professional where you can define the number of entries also in RT and which looks like a common drop down list...

perhaps in the future...
