I need to know what micro processpr (ATMEL,Z80,...)used in S5 CPUs
can you help me?

The S5 was an old design which was a contemporary of the AB PLC-2 and PLC-5. The S5 was based around the Intel 8031 series of microprocessor, which Siemens had a license to make. They also had a custom coprocessor module which they used in some S5 models to speed up some of the boolean logic. Siemens squeezed an amazing amount of functionality out of a simple 8 bit processor. The penalty for this though was that each S5 instruction was fairly primitive and only slightly above the level of the 8031 assembly language. Have a look at the 8031 assembly language and the S5 statement list (IL), and you can see the resemblance.
