I found an example of using UDT which is what you could use. See How do you program "user-defined data types" or UDTs in STEP 7 (TIA Portal)? 

So you can build a UDT for each animal and store there all the data you may need. Then just built a DB to with all the animals and store the data there. 

There is an other example how to use the UDTs, see it here: In STEP 7 (TIA Portal) V12, how do you apply your own data types (UDT)? 

Put together a concept and the rest of it should be easy. If you have questions about "how to" come and ask. I would go for a simple FC and a shared DB with UDTs.
