Is there anybody from iOS developers or S7-1200 specialists who can help me with main understanding of structure or source code about wireless communication iPad with PLC ?

iPad will be connected with static IP Address to router by wifi, PLC will be connected to router by Ethernet(Profinet) and will give digital outputs which iPad says to it.

There are some apps in AppStore, they are working but not helpful to me, because main thing is to create my own design with sliders/buttons where i need to communicate with PLC's outputs. 

The question are: which protocol/port will use this PLC, how PLC will understand input PLC address (ex. I0.0 ) sent from iPad, how to proper assign button with XCODE on iPad to sent digital address to PLC ?

With PLC software is ok to program inputs/outputs, but i stuck with iOS developing network communication. This link is for showing as example how do I want to see it, but to create own app with different HMI.

look, you said that you don't have problems with I/O on PLC, but on both sides you need implement TCP/IP communication protocol. PLC can be Server and IOS Client. You specify XCODE language you want use for IOS implementation, user communication over TCP/IP will be ok in my opinion. You'll prepare your own frame due your needs and it must work without problems. Wirelless is only simply HW signal, Ethernet and TCP/IP are that things you can investigate.

 I really like those apps, very flexible and easy to use.

Only downside is that they doesn't support S7 tag names, you can only direct access Plc memory, I/Os and databases. No tag access means database can't be in optimised mode.
