for details you should read the manual as suggested before. Maybe just in a few words my understanding of the difference between Servo and Vector control.

Servo control is used for high dynamic applications, for example for position controlled applications. The motor model is not that detailed as in Vector mode, so you can reach faster cycle times and thus faster speed values (faster controller cycle times -> higher output frequencies).

The Vector control has a much more detailed motor model and thus it is used if you need high torque accuracy (e.g. winders). Other way round, this control mode is not that fast as Servo and thus you cannot reach so high output frequencies.

Yes VECTOR is available for SINAMICS G too. 

So read the  recommended Manual. Then you can ask your questions in Detail if sth  is not  clear
