You can adapt the structure, datatypes and variables of the OPC UA Server to your needs using the SIOME Tool. Or do you mean change the OPC UA Server at runtime?

when using opcua nodes in node-red, my experience is that the node-red-contrib-iiot-opcua package has some better features for creating an OPC UA Server and adapting it at runtime. They also have some example flows on their github page. 

But are you working with the IOT2040 or IOT2050? If you are on the IOT2040 I would not recommend implementing an OPC UA Server in node-red anyways, because it is usually unstable and crashes after a few hours of usage because there are still some underlying bugs with the v8 javascript engine and the quark processor.
