I was looking for a solution to measure 160 PT100 sensors. 

Those sensors are distributed over a large area. 

Been breaking my head over this for months.

without knowing your site exactly, I would say to use decentral stations with ET200SP, like 

6ES7155-6AU01-0BN0

and temperature measuring modules like

 These ET200SP stations and modules are for mounting in a cabinet. There are other Siemens devices that can be used without a cabinet like ET200eco:

But I have to say, that I am not a fan of planning industrial constructions in a forum.

Contact your local Siemens Engineering support. Use the Contact Database. They may have a better solution for you. Without knowing your site, nobody can say what the best solution is.
