You can change this sensor with another standard temperature sensor (PT-100, or TC). You have to know the temperature range of your application, and proble dimenstion of your sensor in order not to make a mechanical modification.

New test on this station is:

I have two sensors. One is an IR temp sensor that outputs a 4-20mA output based on temperature range. That is the baseline temperature value. ... I then need to read the resistance of the oil temp sensor and first verify it is within operating range of roughly 80K to 90K ohms and then convert that resistance to a temperature based on their specifications and compare that temperature to the IR baseline sensor and make sure they match within specificiation.

If you really need accurate values at the whole range of the sensor, you need to know what sensor you have and find a proper converter.
