Are any of the Siemens modules capable of reading a 1VPP SIN/COS + RS485 absolute encoder?

Check the Siemens Industry Mall for the various SM.... devices (sensor module) like SMC30, SME20/25.  Download the various datasheets to find those supporting absolute encoders, those supporting RS485, those supporting 1Vpp, and so on.  Once you have selected all the available SM's that might meet your needs, download the manual for each SM... and check.

You can also contact your local Siemens Sales Rep and ask for pre-sales support selecting the "best" solution for your specific situation since there may be multiple options that rely on knowing exactly which Sinamics VFD it will be paired with.
