Do you mean to SET the MB/TCP IP address?

That is the S7-1500's IP address for the ethernet connection being used, whether it's the built-in PN/Ethernet ports, or using an add-on COMM module with PN/Ethernet ports.

Do you mean how do you configure the REMOTE MB/TCP IP address? 

Use one of the Siemens provided sample projects showing how to use MB/TCP to see how Siemens does it - as generically as possible, which tends to enable easy HMI integration (in my experience).

What device's IP address needs to be changed and why?

Do you want to assign the remote node's IP address in the MB/TCP files?

Use F1-Help for reviewing how parameters are assigned for the MB block(s) you will use.

Use this support site to download and review sample application(s) using the "Search in Online Support" and try something like "S7-1500 application MB/TCP or modbus tcp" and see if you find at least one application you can find documentation and an example application showing exactly how to use the block(s).
