If the other server supports OPC UA communication, you may be able to configure the S7-1200 as an OPC UA server and have the other device read/write data via this protocol. Please note that the S7-1200 cannot act as an OPC UA client.

Which protocols do the third party device/server has?

If you can use Profinet or similar then do you have a gsdml file from this device?

also Open User Communicaiton could be an option 

But we need to know more about the other system to give advices
