I'm a bit of a beginner with the Siemens TIA portal package and was wondering if there was a way to complete a specific task regarding IO Mapping. 

My aim is to be able to read an input card and then use a function to somehow move the 8 separate BOOLs into a STRUCT in a datablock where each BOOL can be labelled and used in the ladders. This gives the advantage of creating a set of virtual IO that is easier to work with when testing etc. 

I can move the 8 inputs from the card into a BYTE but that doesnt give me the option to give a name to each individual BOOL. When I try to move the BYTE into a STRUCT containing 8 BOOLs (so the same size), it throws a datatype mismatch error.

Any help would be appreciated.

What you ask is already an "advanced" level question.
it depends also on what PLC you are using.

One such way to do it is AT overlay.
For the S7-1200 (and S7-1500) see attached as example.
Search these forum pages for "AT overlay" method for more helpful hints.
For the S7-300 / 400 the AT overlay only works in SCL language.

LATE NOTE
This is possibly what you are looking for.
Search for something to do with "structured IO".
There was a video that showed how to.

Please see the image attached, which works on later firmware versions S7-1200 and for S7-1500.

The PLC I'm using is part of the S7-200SP range (P/N:6ES7512-1DK00-0AB0).

You are speaking of the ET200 SP.. careful as the S7-200 is a different PLC. But your part number does check out.

This PLC has the same attributes as an S7-1500. The earlier suggestions will work.. but if it does the job for you - only you can answer.

 Yes sorry it is an ET200SP. 

I created the structured IO to Structures as the labelled diagram suggested at that has worked perfectly.
