Im thinking about upgrading from 802D with Simodrive 611 to 808D Advanced. I understand I need to change my servo completely (1FL6 motors with V70 drives). But what about the spindle motor ?  Currently I have a 1PH7 Siemens spindle motor. Can that be used ?

Total price for this seems to be more or less the same as upgrading to an old 840D, where the Simodrive 611 and servomotor can be reused.  In this case the Pentium III versions of 840D, I guess somewhere around year 2005ish.

What would be the better choice ? My primary objectives are to use USB port or Ethernet, 3D milling with cycle832 etc.

That is not quite true.

The 808D Adv can also be configured with a Analog signal for the Spindle.

So it could be possible to use the original motor 

The 1PH7 is a normal induction motor right ?  So with a VFD and correct encoder it should work ?

The simodrive 611UE cannot be steered with 0-10V I think ?

That is correct.

I have not done it, but I looked in too it for a project where the customer wanted the same as your project, and as fare as I could estimate the Simodrive 611U does have a Analog set point.

Further study showed that only Simodrive 611 U and not UE has the terminals for the analog set point.

Due to this on the project I was referencing to earlier, we have ended up with a PM240-2 with a CU310 and BOP-20

This project is being commissioned in 2 weeks.

From what I can tell I have analogue inputs. But how do I position the spindle ?

So your servo pack has to be changed to V70.

Regarding the spindle i believe you are thinking about position control?

It all depends on the machine construction.

So if there is a gear box I highly recommend to add a second encoder directly to the spindle shaft and connect it to -X60 on the PPU.

There is also another solution which is to use a sensor, in the manual they call it a BERO sensor, this requires that the Spindle motor encoder is connected directly to the -X60 - But this particular solution is not one I have tried.
