I've calculated both the Gain and Offset:

Gain = (500-5)/(5-1) = 123.75 [L/min]/V

Offset = flowrate - Gain*Voltage = 5 - 123.75*1 = -118.75 L/min

But LOGO doesn't accept Gain values above 10. I converted the voltage values to the 0-1000 bit interval, obtaining:

Gain = 1.2375 (approximately 1.24)

Offset = -118.75 (-approximately -119)

I can now calculate the exact flowrate value for my threshold (converted to bits), but I'm not receiving the actual flowrate value that I need to display on the HMI. What else do I need to do?

No, your formula for gain is not correct.

Gain = (500-5)/(5-1) = 123.75 [L/min]/V

5V are 500 units in the LOGO! program, 1V are 100 units in the LOGO! program.

Gain = (500-5)/(500-100) = 1.2375 

 Yes, that's the Gain that I'm using in LOGO, but when I do an online test with the flowrate sensor turned on, I get one of those 0-1000 units value, and not the L/min value!

How do I convert this "0-1000 value" back to a L/min value?

I'm still receiving a value of 128 on the HMI, instead of 40 L. 40 L is, indeed, 128 for LOGO. But which function do I use now?
