I guess it is because node-red can not longer access its standard in/out/error file handles and it it receives the "HUP" signal (hangup) when you close the terminal.. To avoid this, you would redirect stdout, stderr and stdin to /dev/null:
There is a tool called "nohup" which can be used to suppress this, but it's probably not installed on the IoT:

nohup is installed, in fact, but starting via the run script that iot2000setup creates is the recommended way. |
