in this case I recommend use study/example in this link:

Maybe you can execute your math reading/discovering your requested delay via this fuctions. Correct set Time on CPU is required of course. Simply memory 'start date/time' and try read cyclically when it reach your required delay due that date and time. Other users maybe recommend other solutions but I'm aware of some time interrupt because loss of that in case restart or other inits probably.

I have couple of questions to understand your task better:

When do you start the 8 hour period between calculations? Could it be any time like 13:09:25?

Do you need to make it at a precise interval and use an interrupt or any time within a scan time will do?

Do you record one value and need average of a number of previous values or you have a number of analog inputs and calculate an average of them at the time interval?
