From my understanding there is a way to get full control of S7 using an SSH tunnel. This is what the

 SSH tunnel to PLC &HMI states. I just want to understand how he did it.

Getting control of remote S7 means to be able to upload/download to device and doing any other thing that can be done as if you were directly connected to the PLC or HMI.

We used remote connections to a few customers that is always based on VPN connection. If you have a VPN connection then you can hace access to the S7 resources with IP Adress like in the same network.

You also an use solution with a programming Laptop at the customers side and you can connect through teamviewer or similar to the Programming PC to programm or Maintenance the machine.
