How to log the data or virtualise the data from my program

Help help help please. I would like to know how to log the data or virtualise the data from my program. I have a Train set that have be programmed to run on their tracks. The tracks can be changed if the lanes are open. The track changes are being controlled by some sensors that are connected to the PLC. I would like to record the state of these sensors; whether they are open or closed. I would also like to capture the protocol and save it from the HMI. Any help would be highly appreciated.
