In order to use the 1200 as a profinet controller do I need to update both the simatic software (from v10.5 to v11) and the PLC firmware?

If you want to upgrade firmware of your PLC just check this link http://support.automation.siemens.com/WW/view/en/41886031/133100and find your PLC model in the list to upgrade.
