1. Open a file from the PLC in the FTP server and append the data blocks I can save in the PLC

Problem: I don´t know if this is possible with the S7-200 instructions.

A: The FTP function is not supported by the FTP Client functions on the PLC, so this will not work. The only way would be to load the current data, add your new data and store it back. But here the limited Memory of the CPU is the problem, as you already mentioned.

2. Write different files and then with a Java program organize the information to get it save in just one file.

Problem: Don´t know if for example I can execute a Java applet but from the PLC (Something weird)

A: The issue here is that JAVA does not run on the CP, you can only run it on the PC and I guess you will have a hard time managing the PC to run all the time with a JAVA Runtime. The CP only stores JAVA Code but is not able to process or run it by itself.

3. Write some data to a memory card.

Question: Can I access the memory card data from the PLC, or better from a Java Applet?

A: As far as I know you can access the Storage media to use it as a storage media but only with two wizards to store process values or recipes on the Card. A free access, as you want it, is not possible.

I am sorry but for the use you want to use the S7-200 for you either need a PC or a much larger PLC.
