There are some S5 S7 converts blocks in S7 libary used for S5 blocks to S7, but what is the module adress and channel number? The channal number is the channal on the analog card right? But the module adress? Is that the slot number?

You have to make each analog input or analog output individually and adapt from S5 to S7. The addressing at S5 is completely different than S7. At S5, you indicate which channel on the respective card you assign to which data block and which data word. With S7, you specify this in the hardware configuration via the peripheral words. At S5, the module start address is set on the card by means of DIP switches. Example S5: DIP switches for the module start address are set to 128. The 1st channel on the card is the PW128. The 2nd channel on the card is the PW130. The 3rd channel on the map is the PW132. etc.
