I understand your question different, it depends what library you have installed on your boards. S7-1200 can communicate via Profinet port with TCP/IP or UDP in case of open user commmunication and don't have Wifi Port so you need prepare some Wifi network with another router for S7-1200, it needs to be connected to it. Connect your S7-1200 to that <Standard router> with Ethernet cable and configure correct IP for it.

If I connect my S7-1200 to router with Ethernet, what instructions should I use in programm s7-1200 to read the data from all modules NodeMcu? May be also I must additionally configure NodeMcu for send the data to S7-1200?

Connection is one part but that devices need also be programmed (you select if Servers or Clients) with TCP or UDP communication (don't know that devices but some libraries already exists in my opinion) and your S7-1200 same. In S7-1200 due your protocol selection, use open user communication - TCON/TDISCON/TSEND/TRCV or TSEND_C/TRCV_C or UDP SEND/RECV. Chcek here in forum or in TIA help.
