you can use a VB-script in WinCC Runtime Advanced to write data
to an SQL database, see the following FAQ for example:

Alternatively you could use the option "WinCC/IndustrialDataBridge"
to transfer data automatically directly from S7-1200 to the SQL database,
without using a HMI.

Additionally to Georgs top suggestions, there is the possiblity of Data-Log in S7-1200. With the datalog functionality you can create a csv-file on the CPU and write your data on it. In the S7-1200 manual you will find more information about it. chapter 9.7.2:
