Daniel already showed you the samples for OPC Servers.
The Software you need would be, depending on the interface used:

SOFTNET S7 for industrial Ethenet ( if you haven an Ethernet interface at the PLC )
SOFTNET S7 for PROFIBUS ( if you have a PROFIBUS interface of you use MPI )

For industrial Ethernet you may use any NIC available, for PROFIBUS you should use a CP, like

CP 5611 (PCI interface)
CP 5512 (Cardbus)
CP 5711 (USB 2.0)
