I also am using a few flow meters that I need to record the totalized flow for one day, after the day (12 or 24 hours) I need to either clear out the value in a register to make room for the next day, or log it somewhere in a spare register so that I can call upon it at a later time.

As of now I am recording the TOTAL flow that has passed through the valves, butIneed a little finer resolution.

I am using Step7 (V5.5) and WinCC Flexible (V1.4)

If you could provide me with an example or any kind of tips or tricks to accomplishing this task I would be greatly appreciated.

I think you have to dothe following steps:
1. Read out the time of the CPU
2. Convert the CPU time to local time (in PCS7 the local time <> the CPU time due to time zones)
3. Create a time clock function to trigger a function when a certain time has been reached e.g. 12.00 or 24.00
4. Calculate the difference between the current TOTAL value and the last TOTAL value.
5. Store the difference in a register
6. Store the current TOTAL value for the next calculation
