Following the instructions in this post in this forum, I can see and calculate the memory addresses of my S7-1200 device.

Thing is, I'm not certain how I can match an address I see to its corresponding value. Meaning, I haven't found a Modbus address mapping where (for example) address 30001 is voltage, 30002 is current and so on.

Are you aware of such a tool/option to see that mapping?

how data are mapped on specific device, to have these data avilable at your PLC via protocol, you need look at specific Slave/Server device documentation. As mandatory, I recommend also improve Modbus knowledge because then it is possible you'll have problems to understand some specific options.
