logging a UDT as a table/dataframe/array/multicolumn csv

I have a UDT that contains several metrics pertaining to the production of a widget

Id like to log(?) a history of the widgets made to see which ones take more time/energy to make.

When setting up logging tags I have done that for each element in the UDT and used a log trigger to populate the logfile with the data at the end of the machine cycle and increment the 1st element of the UDT which is the log entry.

I'm unsure how the structure of a log is;

Is it that each log is a table and each logging tag is a column in that table, that would work quite well for what I am doing 

OR

is it that each tag is its own table with time stamp and the log that it is in makes little/no difference.

then ones I have the tags in the log is there an easy () way (ie. without custom web controls) to display the data in a table. I see there is an application example for alarms but I am not working with alarms. 

There is also a function to export a tag value as a csv file but I would like a multi column csv. An example of that if known would be great before I try and put it together myself.
