Have a look in this manual: Commissioning PC Stations - Manual and Quick Start I think, chapter "7 Example — OPC Application for Industrial Ethernet" is exactly, what you are looking for (Instead of the CP 1613, that is mentioned there, you can use any ethernet card in your PC).

In order to see some symbols in the "Use symbols" dialog of your OPC server you need: to configure a S7 connction between the PC station, that contains the OPC server, and the PLC, that contains the symbols Symbols in the symbol table of the S7 program, that is in the PLC If you meet this prerequesites, you should see the symbols of the connectel PLC in the "Use symbols" dialog (after choosing "Selected" in the "S7" tab of the properties dialog of the OPC server).
